Acetate Description: Sodium acetate trihydrate, is readily formed by the reaction of acetic acid (vinegar) and sodium hydroxide, sodium carbonate or sodium bicarbonate. Sodium acetate is used in the meat and poultry industries to enhance flavour. The diacetate (sodium diacetate is a 1:1 complex of sodium acetate and acetic acid) is used for a similar purpose and as an inhibitor of the growth of certain pathogens.
